Abstract

Purpose

The purpose of this paper is to examine the family dinner in Los Angeles County, California, focusing on the role of commercial foods and the time invested in food preparation. Popular media emphasize the increasing use of processed commercial foods in the USA.

Design/methodology/approach

A total of 64 dinner preparation and consumption events were videotaped and observed (32 families, two weeknights each). Observations determined the source of food served (restaurant, take‐out, or home‐cooked), the ingredients and dishes in each meal prepared at home, and the time required to prepare it.

Findings

The findings in this paper showed that, even when prepared at home, most evening meals included processed commercial foods in at least moderate amounts. Home‐cooked meals required an average of 34 minutes' “hands‐on time” and 52 minutes' “total time” to prepare. Heavy use of commercial foods saved, on average, ten to 12 minutes, hands‐on time but did not reduce total preparation time. Commercial foods require more limited cooking skills and permit more complex dishes or meals to be prepared within a given time‐frame than do raw ingredients. They may also reduce time investment at stages other than meal preparation, such as shopping.

Originality/value

This paper provides a rare glimpse of food preparation and meal consumption behavior on the family level. Most reports on US food habits are based on survey and purchasing data, rather than direct observation of household activities as used here.

Abstract

Accounting’s definition of accountability should include attributes of socioenvironmental degradation manufactured by unsustainable technologies. Beck argues that emergent accounts should reflect the following primary characteristics of technological degradation: complexity, uncertainty, and diffused responsibility. Financial stewardship accounts and probabilistic assessments of risk, which are traditionally employed to allay the public’s fear of uncontrollable technological hazards, cannot reflect these characteristics because they are constructed to perpetuate the status quo by fabricating certainty and security. The process through which safety thresholds are constructed and contested represents the ultimate form of socialized accountability because these thresholds shape how much risk people consent to be exposed to. Beck’s socialized total accountability is suggested as a way forward: It has two dimensions, extended spatiotemporal responsibility and the psychology of decision-making. These dimensions are teased out from the following constructs of Beck’s Risk Society thesis: manufactured risks and hazards, organized irresponsibility, politics of risk, radical individualization and social learning. These dimensions are then used to critically evaluate the capacity of full cost accounting (FCA), and two emergent socialized risk accounts, to integrate the multiple attributes of sustainability. This critique should inform the journey of constructing more representative accounts of technological degradation.

Abstract

Purpose

While a number of scholars have observed that the contemporary self has to negotiate a “push and pull” between autonomy and a desire for community (Austin & Gagne, 2008; Bauman, 2001a, p. 60; Coles, 2008; Giddens, 2003, p. 46, the struggle between the “self” and “others” that is at the heart of symbolic interactionist (SI) understandings of the self is often missing from sociological discussion on the “making of the self” (Coles, 2008, p. 21; Holstein & Gubrium, 2000), and the current chapter contributes to this literature.

Design/methodology/approach

To gain insight into “the making of the self,” in-depth life history interviews were conducted with 23 former members of new religious movements (NRMs) specific to their construction of self. Interview data was analyzed for variations in the ways in which individuals describe their construction of self. To make sense of these variations, SI understandings of the self are applied.

Findings

Analysis indicates that the extent to which individuals are informed by the social versus the personal in their self-construction is a continuum. From an SI perspective the self is conceptualized as to varying degrees informed by both the personal and the social. These two “domains” of the self are interrelated or connected through an ongoing process of reflexivity that links internal experiences and external feedback. From this perspective, “healthy” selves reflexively balance a sense of personal uniqueness against a sense of belonging and social connectedness. While a reflexive balance between the “self” and “others” is optimal, not everyone negotiates this balance successfully, and the extent to which individuals are informed by the social versus the personal in their self-construction varies and can be conceptualized as on a continuum between autonomy and social connectedness. The current findings suggest that where individuals are positioned on this continuum is dependent on the availability of cultural and personal resources from which individuals can construct selves, in particular in childhood. Those participants who described themselves as highly dependent on others report childhood histories of control, whereas those who described themselves as disconnected from others report histories of abuse and neglect.

Research limitations

The problems of relying on retrospective accounts of former members should be noted as such accounts are interpretive and influenced by the respondents’ present situation. However, despite their retrospective and constructionist nature, life history narratives provide meaningful insights into the actual process of self and identity construction. The analysis of retrospective accounts is a commonly recommended and chosen method for the study of the self (Davidman & Greil, 2007; Diniz-Pereira, 2008).

Social implications/originality/value

The current findings suggest that significant differences may exist in the way in which individuals construct and narrate their sense of self, in particular in regards to the way in which they experience and negotiate contemporary tensions between social connectedness and individuality. In particular, the findings highlight the importance of childhood environments for the construction of “healthy” selves that can negotiate contemporary demands of autonomy as well as social connectedness.

Abstract

This chapter reflects on the construction of transnational marital bonds over time. First, based on multi-site fieldwork carried out in 2011 and 2012 in two regions of Mexico and one of the United States, an extensive discussion on the transnational family and the construction of conjugality is presented from the point of view of two dimensions: intimacy and domestic organization in heterosexual couples with young children and conjugal unions recognized as successful. The second part discusses the same results of the study after a decade, based on contact with the same participants and an exploration of their trajectories of intimacy and family organization. The notion of life cycle and family trajectory is introduced into the discussion, arriving at paths in the definition of intimacy that discuss the romantic component initially identified and add the confessional and post-romantic components as part of the experience of geographical distance for prolonged periods of migration, in addition to aging processes.

At the present time when all kinds of adulterants are being employed by many bakers in the manufacture of bread, and the food rations, and bread rations in particular, are considerably reduced, it is of the utmost importance that the public should take what steps they can to obtain a bread which contains a relatively high percentage of assimilable proteins. Many of the “ war breads ” which have been manufactured of late cannot be characterised as satisfactory and desirable products especially in view of the cases of acute indigestion which have been directly attributed to the use of such bread. One of the “ Die Hard ” fallacies, which continues to be promulgated by some members of the Scientific and Medical professions with obstinate regularity, is that the protein content of a food is an absolute indication as to its nutritive value. Nothing could be much more misleading or erroneous. It is quite possible for a food to contain a high percentage of substances described as proteins and yet to possess very little or no nutritive value for the average person inasmuch as many of the substances described as proteins may be entirely indigestible or nearly so. The nutritive value of any food to any given person is largely dependent upon the idiosyncrasies of the person, the amount of available protein present in the food, and certain other factors.

Abstract

The institution of food and cookery exhibitions and the dissemination of practical knowledge with respect to cookery by means of lectures and demonstrations are excellent things in their way. But while it is important that better and more scientific attention should be generally given to the preparation of food for the table, it must be admitted to be at least equally important to insure that the food before it comes into the hands of the expert cook shall be free from adulteration, and as far as possible from impurity,—that it should be, in fact, of the quality expected. Protection up to a certain point and in certain directions is afforded to the consumer by penal enactments, and hitherto the general public have been disposed to believe that those enactments are in their nature and in their application such as to guarantee a fairly general supply of articles of tolerable quality. The adulteration laws, however, while absolutely necessary for the purpose of holding many forms of fraud in check, and particularly for keeping them within certain bounds, cannot afford any guarantees of superior, or even of good, quality. Except in rare instances, even those who control the supply of articles of food to large public and private establishments fail to take steps to assure themselves that the nature and quality of the goods supplied to them are what they are represented to be. The sophisticator and adulterator are always with us. The temptations to undersell and to misrepresent seem to be so strong that firms and individuals from whom far better things might reasonably be expected fall away from the right path with deplorable facility, and seek to save themselves, should they by chance be brought to book, by forms of quibbling and wriggling which are in themselves sufficient to show the moral rottenness which can be brought about by an insatiable lust for gain. There is, unfortunately, cheating to be met with at every turn, and it behoves at least those who control the purchase and the cooking of food on the large scale to do what they can to insure the supply to them of articles which have not been tampered with, and which are in all respects of proper quality, both by insisting on being furnished with sufficiently authoritative guarantees by the vendors, and by themselves causing the application of reasonably frequent scientific checks upon the quality of the goods.

The Empire Day Movement, which is associated with the Royal Empire Society, announces that with the object of inducing the Government to take effective action against the practice of selling blended butter, predominantly foreign, under labels and in packets which suggest English origin, a memorial has been signed by representative organisations and members of Parliament of all parties. The memorial, which has been sent to the President of the Board of Trade, the Minister of Agriculture, the Chairman of the Empire Marketing Board, and the Chairman of the Food Council, is as follows :—In the interests of the butter‐consuming public, as well as of agriculture and the promotion of Empire trade, we, the undersigned, call the attention of the Government to the continuance of certain practices to which allusion is made in the fourth report of the Imperial Economic Committee. In paragraph 243 the report says: Blended butter is at present sold under various proprietary brands. In certain cases these brands embody the names of counties or districts which are known to be important agricultural or dairying areas in the Home Country. The suggestion inevitably conveyed in such cases to the bulk of the consumers must be that such butter is of English origin.
